Chef Brad Wise
From his roots as a kid cooking in the kitchens of New Jersey to his journey into nationally-acclaimed chef and restaurateur, Chef Wise has always created dishes that are an extraordinary reflection of the season, region and himself. Since 2016, he’s captured the hearts and palates of San Diego’s restaurant industry influencers and foodies with the opening of TRUST and Fort Oak.
Prior to opening TRUST & Fort Oak, Steve worked as Director of Operations for Cannonball and Draft at Belmont Park. His experience in both front and back of house line positions over the last 20 years in San Diego, San Francisco & Las Vegas has given him the foundation for an overall understanding of how a restaurant works from every perspective. For Steve, providing great service is everything because he knows that is what takes a memorable food experience to the next level.
Growing up in the industry, Frank's early years washing dishes and bussing tables at his family's Italian restaurant led him to graduate second in his class at San Diego Culinary Institute. After spending some time in the kitchens of Polite Provisions and Prep Kitchen, he discovered that where his passion really laid was in his interaction with guests. Over the next six years, he grew his chops developing creative cocktails and slinging conversation behind the bar of Polite Provisions before partnering with Brad and Steve in the renovation of Small Bar in 2019.
